Sangita Dewri, Food Correspondent: Pitha is the significance of Assamese delicacies. It is prepared in every household on any occasion, especially on Bihu. This is not a season of Bihu, but, I thought of sharing a recipe of pitha made of black rice. Black rice is very glutinous and is rich in protein. It is also an antioxidant in nature.
INGREDIENTS
- Black Rice – 2cups
- Coconut -1cup grated
- Water – 500ml
- Baking soda – a pinch
- Vegetable oil – 250ml
- Jaggery – 1/2 cup grated
PROCESS
Soak the rice in water overnight. Grind it and then sift. Now, add grated coconut, baking soda and jaggery with the rice powder and give it a mix. Then add water to make a dough. Knead the dough for 5mins. Make balls and flatten to the size of cutlets. Now, heat the oil and fry the prepared balls on low flame. You can store it in an airtight container for about 15days.
