Bhaswati Das, Food Correspondent: This Diwali lets cook special recipe Moong dal halwa in complete homemade style.
Ingredients:
1. Moong dal – 1 cup (soaked).
2. Sugar – 1 cup.
3. Saffron – A generous pinch.
4. Milk – 1/2 cup.
5. Ghee – 1 cup.
6. Khoya/ Mawa – 3/4 cup.
7. Almonds – 10 – 12 (slices/ smoothly blend).
Method:
1. Drain and grind the moong dal coarsely using very little water.
2. Prepare one-string sugar syrup, with the sugar and one and half cups of water. Soak the saffron in hot milk.
3. Heat the ghee in a thick-bottomed non-stick pan and add the moong dal and saute, stirring continuously, over low heat till the dal turns golden brown. This needs time and patience. Do not rush through this step.
4. Add the sugar syrup and saffron-flavoured milk. Stir till they are thoroughly incorporated and the halwa is of dropping consistency. Add Mawa/ khoya and cook till it dissolves.
5. Decorate with almonds.
6. Serve hot.
