Sangita Dewri, Food Correspondent: The year 2020 has not been as blissful as we thought; all thanks to the global pandemic Coronavirus but Puja is the best time for which everyone is awaiting for all the ceremonial glory. As social distancing is the most important at this time so, most of us are going to stay away from the mandaps I suppose.
But, why miss the sweets which we thoroughly enjoy during this season, i.e., JALEBI. So, here I bring you the most delectable sweet with a royal twist..
Preparation time : 45 mins
Cooking time: 30 mins
Ingredients for JALEBI
– Sugar 1 cup
– Water 1/4th cup
– Saffron strands
– Maida ½ cup
– Corn flour 1tsp
– Curd 1tsp
– Yellow food colour 1/8th tsp
– Vinegar 1tsp
– Baking soda 1/4th tsp
– Oil ½ ltr
– Ghee 2 tsp
For RABDI
– Milk 1ltr
– Sugar 1 cup
– Cardamom powder 1 tsp
– Saffron
– Pistachios
– Almonds
– Kaju
PROCESS
Firstly, mix water and sugar and bring to boil. Add saffron to it and stir till 1 string consistency, add lemon juice and cover it. Then into a bowl mix maida, corn flour, curd, food colour, vinegar, baking soda and water and whisk it. Put oil and the ghee into a pan until hot, then, fill the batter into an empty sauce bottle and make round spirals in the hot oil. Fry both sides. Put the jalebi into warm sugar syrup.
Now boil the milk and stir continuously until thick, add sugar, cardamom powder and saffron milk. Stir and boil well. Chill and add the nuts.
Serve the hot and crispy jalebi with rabdi .. ENJOY !!
