Malaya Neog, Tinsukia: Paneer Chaman is a traditional Kashmiri vegetarian delicacy. It’s a wonderful Paneer dish to quench your hunger. this is a Cottage cheese recipe made with tomato where Chaman means ‘Tomato’ in Kashmiri language puree, cooked with Kashmiri flavours. This recipe goes well with rice.
Ingredients :
Paneer – 250g (cut into thick rectangular pieces)
Tomato puree – 1cup
Green Peas – 5 -7 pods(optional)
Ghee – 1 tbsp
Bay leaves – 2 nos
Onion – 1 no(finely chopped)
Ginger Garlic paste – 1 tsp
Cumin Powder – 1/2 tsp
Coriander powder – 1/2 tsp
Garam masala – 1tsp
Kashmiri red chilli powder – 2tsp
Turmeric powder – 1/4 tsp
Cinnamon stick – 1/2 no
Black cardamom – 2nos
Green cardamom – 2-3 nos
Salt to taste
Water as required
Oil for cooking
Coriander leaves – for garnishing
Method :
Heat oil in a pan & shallow fries the paneer until both sides turn light brown. Keep aside the paneer pieces. To the same pan add bay leaves, cinnamon, black/green cardamoms.
Add onion & ginger garlic paste. Now add tomato puree, red chilli powder, cumin powder, coriander powder, turmeric & salt and mix them well. Add paneer, green peas & mix it well.
Add water & cook for some time. Add garam masala & ghee. Cook for 2-3 mins. Garnish with coriander leaves. And the dish is ready to be served.
