Bhaswati Das, Guwahati: The most delicious & creamy Paneer dish is Shahi Paneer. There are many versions of the same but mine is simple, homemade & of course yummy to taste.
Ingredients
For Curry:
1. Tomatoes — 500gms.
2. Black Cardamom – 2 nos.
3. Onion — 250gms.
4. Cinnamon Stick (small) — 1 no.
5. Bayleaf – 1 no.
6. Garlic Cloves — 8 nos.
7. Green Cardamom — 4 nos.
8. Ginger (chopped) — 1 1/2 tbsp.
9. Cloves — 4 nos.
10. Green Chilly – 2 nos.
11. Cashewnuts – 3/4 cup.
12. Butter – 2 tbsp.
13. Chilly Powder (Kashmiri) – 1 tbsp.
In the pan:
1. Butter – 2 tbsp.
2. Green Chilly (slit) – 1 no.
3. Ginger (chopped) – 1 tsp.
4. Paneer Cubes – 1 1/2 cup.
5. Red Chilly Powder (Kashmiri) – a pinch.
6. Curry – add the above-pureed curry.
7. Salt – to taste.
8. Sugar – a large pinch.
9. Kasoori Methi Powder – 1/4 tsp.
10. Cream – 1/2 cup.
Method:
For the curry:
1. Mix all the ingredients and cook till the tomatoes get mashy.
2. Blend them to make a fine puree and pass through a strainer.
For a Pan:
1. Now heat a pan and add butter.
2. Add chopped ginger and green chilly (slit).
3. Now add a dash of water so that chilly won’t burn.
4. Now add the above curry along with salt, sugar, fenugreek powder and cook to a coating/slightly thick consistency.
5. Now add the paneer dices (I prefer raw/if you want you can fry it also).
6. Remove from fire and then add cream.
7. Stir and Serve hot with pulao, flavoured rice, butter naan or chappatis
