Malaya Neog, Tinsukia: Shahi Tukda is a Mughlai dessert made with ghee fried bread slices, milk, dry fruits, cardamom, etc. It is also known as Double ka meetha, a popular sweet dish in Hyderabad. It is served as an after meal dessert.
Ingredients:
Bread – 4 slices
Ghee – 2tbsp
Water – 1&1/2 cup
Sugar – 1/2 cup
Rose syrup – 1/2tsp
Milk – 2 cups (400ml)
Condensed milk – 1/2cup
Cardamom powder – 1/2tsp
Dry fruits (Nuts, Cashews, Almonds, Pistachios, Raisins) – 1/2 cup (chopped)
Method:
For Sugar syrup:
Heat water in a saucepan & add sugar. Mix till sugar dissolves in high flame. Cook for some time. Add rose water. Mix & boil for 2 mins. Switch off the flame & let it cool.
For Rabri:
Bring milk to a boil in a wide pot on high flame. Reduce the flame to low & continue to boil until the milk reduces to half. Add cardamom powder & mix well. Add chopped nuts, almonds, cashews, pistachio. Add condensed milk. Mix & boil for another 5 mins. Switch off the flame. Set aside & cool this.
Bread:
Remove the brown edges & cut the bread slices diagonally. Now in a pan, melt ghee & place bread slices. On a low flame fry the bread evenly till they turn golden & then flip the bread pieces. Switch off flame & set aside.
Finally,
Immerse these bread slices in the sugar syrup one after the other & arrange them in a serving dish. Pour the rabri over the bread slices & garnish with chopped dry fruits.
