Pork with bamboo shoot in Naga style

Malaya Neog, Tinsukia: Let’s cook up one of the favourite pork recipes which we call Bamboo Shoot in Naga style. It’s one of the most popular dishes in Nagaland as we as in the entire Northeast.

Ingredients: 

Fresh Pork meat – 500gm, Wash the pork well & drain properly. Keep aside.
Bamboo Shoot – thinly sliced.
Dried Red chillies – 5nos
Garlic – 8cloves
Ginger – 1inch
Crushed the ginger, garlic & dried Red chillies in a coarse paste.
Onions – 3 nos, chopped
Red chilli powder – 1tbsp.
Hot water – 1glass.
Salt to taste.

Preparation: 
Put the pork in a pressure cooker and place it over medium flame. Keep stirring. Add salt & stir again. Now add the chopped onions & stir fry for a min.

Then add the Ginger – Garlic – Chilli paste & stir for 2/3 mins. Add sliced Bamboo Shoots & gently stir for 5 mins. Add the Red chilli powder to get a nice color.

Mix the ingredients well & cook for several more mins.

Now add Hot water to cover the meat & close the lid of the cooker & cook on medium flame.
Let it whistle for 5 times.

Turn off the flame.

Take out the meat as soon as the pressure is released.

And my dish is ready.
