Bhaswati Das: Pani Pitha is one of the integral food items of our Assamese traditional food culture. Without rice/rice powder our most of the food items are incomplete. There are varieties of pithas and one of them is Pani Pitha.
Ingredients for Pani Pitha:-
1. Rice (regular rice)
2. Salt
3. Baking soda
4. Water
Recipe for Pani Pitha:-
Soak the rice in water for overnight. Next day wash the soaked rice once, and then grind it in a mixer into a smooth paste. Add little bit of water to make pitha fluffy. Now add salt and baking soda (as per proportion). Mix it all. Now heat up the tawa/dosa tawa, pour a small amount of batter on the tawa, and now cover the batter with a shallow lid. Now sprinkle handful of water around the lid and let it soak. After soaking the water, now open the lid and it’s done!!!!
Hot and fluffy Pani Pitha is ready; now sprinkle some sugar/jaggery (cut into small pieces) over the pitha. Have the pani pitha with milk tea or red tea.
Yum in taste and it’s healthy too.
