Pallabi Baruah: With festive season at doorsteps, the craving for sweets surges. Alas, for this ongoing pandemic we have to limit our cravings. Although we cannot celebrate Durga puja with zeal but can cook some deliciously items at home and enjoy.

So let’s make easy and healthy traditional snack dhokla with a pan.

Ingredients

– Gramflour (Beson): 2 cups

– Semolina (Suji): ¼ cup

– Sugar: 4 teaspoon + 2

– Salt : 1 teaspoon

– A small piece of ginger (grind smoothly)

– A pinch of turmeric

– Lemon Juice: 2 small spoon

– Refine oil : 2 tea spoon

– Eno (unflavoured) : 1 small spoon

– Curry leaves, green chilly and mustard seeds (as per taste)

Process

Add gramflour, semolina in a bowl. Now add four teaspoon of sugar, 1 teaspoon salt along with a pinch of turmeric and ginger paste; mix it well. Take 1 glass of lukewarm water and add to the mixture. Keep on mixing for at least 15-20 minutes. Make sure that the batter is neither thick nor too thin. Cover the bowl with a lid and let it rest for 30 minutes. After half an hour the batter will become a little spongy. Now add the lemon juice, oil and mix well again. Pre-heat a pan or Kadahi with some water in it and then place a stand. Take a steel bowl and grease it with oil. Meanwhile add the packet of eno in the mixture for 2 minutes and immediately pour the batter in the steel bowl. Now put the bowl in the pan, cover the lid and cook it for about 45 minutes in medium flame. After 45 minutes put off the flame, allow the Dhokla to cool down and take it out in a plate.

Now let’s prepare Tadka for the Dhokla

Quickly heat a pan, add two spoon of oil, mustard seeds, curry leaves and green chillies. Then add 1½ glass of water to it. When it boils add two spoon of sugar and stir for two minutes.  Now put the flame off and let the water cool down. For platting cut the Dhokla in pieces and add the Tadka to it. The Tadka should be little warm so that it can be soaked properly by the Dhokla.

Voila, our yummy Dhokla is ready to serve. Enjoy!!
