Minakshi Saikia, Tezpur: Cake is not just a sweet food but an emotion. I barely have known someone who hates cake. Well, to make this sweet food a super food, I have a recipe with the super ingredient ‘banana’. Banana is a powerhouse of fiber, potassium, folate, and antioxidants and I will serve you a perfect Banana cake recipe in a pressure cooker at home.
Ingredients:
2 ripe Bananas
Coffee: 1 teaspoon
Brown sugar: 1 cup OR powdered sugar: 1 cup
Oil: ½ cup
Flour: 1 cup
Baking powder: 1 tablespoon
Baking soda: ½ tablespoon
Milk: ½ cup
Procedure:
First of all, take 2 bananas and add coffee and brown sugar to it. Mash all the ingredients and then beat well till it doesn’t becomes smooth.
After that add flour, baking powder, baking soda and milk into the mixture.
Mix all the ingredients well.
Now, grease a pan and dust some flour into it. If possible use butter paper or parchment paper and then pour the batter.
Before making the batter pre-heat the pressure cooker for few minutes by spreading some salt and cover the lid without the whistle.
Keep it in medium flame for atleast 10 minutes. After the completion of the batter.
Place a plate over the salt to cover the salt. The bottom of the cake may get burnt or over baked if you place the pan directly. Than close the lid of the pressure cooker without putting the whistle. Keep it in low flame for 35-40min.
When the cake is done you will get the aroma of the baked cake. A tester inserted comes out clean. If it moist, bake it for a few more minutes.
Your cake is ready.
